Easy Steps to Making Mouth-Watering Chocolate Candy

Tempering is the process by which you give shine and smoothness to chocolate, which is not their natural quality. Blooming is prevented and the chocolate breaks cleanly with tempering.

Improper tempering is the basic cause for formation of crystals and blotches on chocolate surfaces. The natural temper that is lost while heating the chocolate can be returned by tempering.

Cocoa butter, that is the basic ingredient of chocolate, has in it, large quantities of solids and these solids and the butter’s crystals get suspended during heating. But during melting, the crystals separate from the solids and rise to the surface separately.

Cocoa butter’s unique quality of re-crystallizing into six forms, and these six types of crystals behaving dominantly at six different temperatures make it necessary to closely monitor temperatures during tempering. Out of these six types of crystals, type V, gives snap and shine to chocolate.

Hence tempering is done to increase the quantity of type V crystals. Along with type V crystals, type IV is also formed and to eliminate it and retain type V crystals, reheating is done. For achieving the aim of strict maintenance of temperatures, you can use a digital laser thermometer.

Each variety of chocolate has specific heating and cooling temperatures. General tempering methods are tabliering and seeding by hand and the microwave method. Of course, chocolate tempering machines can make tempering easier, but chocolate makers will immensely benefit if they learn tempering by hand.

Tabliering starts with cutting a mass of chocolate into small strips. These strips are melted by heating to a specific temperature on a double boiler. The melted chocolate is divided into two and the first half is poured on a marble surface and worked upon to obtain smoothness and shine; then it is cooled to a specific temperature. After working on the other half, the entire mass is mixed to distribute temperatures evenly. Then come the dipping and molding of your candies. The mass of chocolate should not lose its shine and smoothness and not harden also.

Similar is the seeding process except that a “seed” or an already-tempered chunk is used to “inoculate” the melted chocolate. This enables type V crystals to dominate the crystallization process. Temperature maintenance is a must in this method also.

Microwave method also requires strict adherence to fixed parameters over variables like wattage of the oven, the level of cocoa butter in the raw chocolate and the quantity of chocolate added to the bowl for melting purpose.

The hassles in chocolate tempering arise due to not maintaining the required temperature, over-mixing and under-mixing and due to humid weather conditions. Even experienced chocolate makers face the brunt of humidity in weather.

It is true that the tempering process in chocolate making is a tough one but it is worth the pleasure you get when you gift your chocolates to others; it becomes more than the difficulties you face in chocolate making.

In the past, a family tradition was to pass down antique silver as a heirloom as a wedding gift to a new bride. Finest silver was crafted in many beautiful and often, ornate designs. This was tableware at its finest. The weight of each knife, fork, spoon and accessory silverware was obvious. It felt wonderful to hold an heirloom silver knife and fork in one’s hand at a special dinner. There were other fine-crafted silver pieces that included a formal coffee and tea set as well as chargers that rested beneath hand-painted china. Antique silver pieces also were produced as vases, urns, goblets, silver statuary, ash trays, serving trays, combs, brushes, mirrors, cigarette cases and ladies powder compacts. In the past, it was believed that silver had a special mineral value that added to the flavor of foods just as copper kettles did. However, silver tableware does require regular polishing or a slight, dull green cast will reduce its gleam and shine.

Another reason for the purchase of fine pieces of silver was its value. In times of economic difficulty, silver could be sold at the current currency value of the times. As with gold, silver rarely loses value and remains a stable investment. The most valuable silver is based upon the percentage of silver purity or amount of silver contained in the creation of the silver pieces. Add to this, the age of the silver and the prestige of its craftsmen and silver can be quite a good investment for collectors. Another factor in the value of silver may also be the location from which it has been mined. Though silver is considered second in value to gold where minerals are concerned, silver maintains a good return on investment over time.

Many cry and wonder why
And seek further insight
From big Daddy in the sky
Not knowing what’s going on
Having nobody upon whom to hold on
When the church service is over
And all have come and gone.

Once the offering has been given
All hands shaken
Smiles exchanged
A remembrance of a few names
Dreams unfulfilled continue to turn within
Waiting incessantly for Christ within
The hope of glory to arise
To burst the bonds
Remove the guise
Fulfill His Word
And all surprise.
This futile life
How can it be
That Christ above
Would lower Himself
To die for me!
Amazing love
Beyond comprehension
That upon the cross
Christ knew painful suspension
Brutal torment
The lashing of whips and tongues
The departure of the Holy Spirit
After which He Himself was numb

It’s in the silent moments
When defeat seems evident
That the seed of significance is sown
The power of the resurrection grown
The sufferings of Christ fully known
When you seemingly are left all alone
Many don’t understand
And are quick to judge
I however care not
Knowing the Judge above
Moreover I judge myself strictly
Examine myself wholeheartedly
Desiring to walk circumspectly
To be godly and live selflessly.

Nevertheless life’s circumstances can be hard
And your faculties they temporarily retard
Making you sluggish as lard
Dulling your senses
Troubling your soul
Effecting all areas of your life
Troubling and taking their toll

Thanks be to God however
The Son did arise
With power, strength and fire in His eyes
Though many did not initially realize
And Him they publicly despised
Yet when He bounced back from defeat
Many hid in fear
Others wondered in amazement
The victimized applauded happily
Counting His resurrection
Their personal victory

It is my urgent request
That you too personalize Christ’s triumph
Over death, hell and the grave
For you too He surely
Came to save
His death
Being your life
His breakthrough
Breaking chains for you today!
Liberating you in every way
No matter what you do or say
Christ’s victory personally appropriated
Can better your day
Illuminate your way
Reverse the curse
Remove the tendency to rehearse
Your personal pain and setbacks
Because in Christ
You too bounce back!
You too are blessed
And can boldly express
His more over your less
His loving-kindness
His mercies countless
His joys boundless
His grace groundless
His Spirit measureless
So before you digress or regress
Consider God’s profoundness
To turn Christ’s sorrow

His minus

So why therefore all the fuss?
Remove your eyes from yourself

In the face of cruelty and criticism

Or rationalize it away

Christ the hope of glory

By reasoning against love
You cannot win
So this determine
Take this boundless, immeasurable love
And spread it throughout the nations
With it overtake the world
Turn it upside down
Take it beyond the head
Down deep into the heart
Ignite a fire within
From which no soul can depart

Magnify and multiply
This raging inferno in your heart
And erect a monument of love
An eternal work of art
From which even the hardest of hearts
Cannot depart
Let all humanity know
The glorious creation itself does fully show
That though winter may come
It does also go
And is followed by spring
A time to flourish
A time to sing
